Recipe of the week - Mediterranean Steak Salad

Why should I cook this meal tonight?

Ingredients:

  • 250-300g Lean Steak (grass-fed ideal)
  • 200g Sweet Potato (cubed)
  • 50g Feta Cheese
  • 75g Olives
  • Rocket/Spinach
  • 1 tsp coconut oil
  • Sea salt/black pepper
  • Low sugar caesar salad dressing
  • Drizzle extra virgin olive oil (optional)

Method:

  1. Peel & cube the potato, drizzle with (heated) coconut oil and cook in the oven at 180 for approx 30 mins.
  2. You have 20 minutes of free time!
  3. Fry the steak rare/medium in 1 tsp of coconut oil and slice - set to one side.
  4. Take out the potato once cooked, serve on a bed of of rocket/spinach and add the sliced steak.
  5. Sprinkle olives, feta and drizzle with 1 tsp of olive oil.
  6. Add the caesar salad and season to taste.
