Recipe of the week - Mediterranean Steak Salad

Ingredients:
- 250-300g Lean Steak (grass-fed ideal)
- 200g Sweet Potato (cubed)
- 50g Feta Cheese
- 75g Olives
- Rocket/Spinach
- 1 tsp coconut oil
- Sea salt/black pepper
- Low sugar caesar salad dressing
- Drizzle extra virgin olive oil (optional)
Method:
- Peel & cube the potato, drizzle with (heated) coconut oil and cook in the oven at 180 for approx 30 mins.
- You have 20 minutes of free time!
- Fry the steak rare/medium in 1 tsp of coconut oil and slice - set to one side.
- Take out the potato once cooked, serve on a bed of of rocket/spinach and add the sliced steak.
- Sprinkle olives, feta and drizzle with 1 tsp of olive oil.
- Add the caesar salad and season to taste.
