Ingredients:

  • 250g Butchers sausages (g/f if coeliac)
  • 200g Sweet Potato (cubed)
  • 80g Parmesan Cheese
  • 60g Chorizo
  • 250g Spinach
  • 1 red pepper
  • 100g cherry tomatoes
  • Sea salt/black pepper

Method:

  1. Peel & cube the potato, chop the sausages, chorizo and veg, and place in a dish in the oven at 180 for 30 mins.
  2. Take the dish out from the oven and stir in fresh spinach to wilt, and 80g grated parmesan then mix.
  3. Serve each portion with a poached/fried egg.
