Ingredients:
- 250g Butchers sausages (g/f if coeliac)
- 200g Sweet Potato (cubed)
- 80g Parmesan Cheese
- 60g Chorizo
- 250g Spinach
- 1 red pepper
- 100g cherry tomatoes
- Sea salt/black pepper
Method:
- Peel & cube the potato, chop the sausages, chorizo and veg, and place in a dish in the oven at 180 for 30 mins.
- Take the dish out from the oven and stir in fresh spinach to wilt, and 80g grated parmesan then mix.
- Serve each portion with a poached/fried egg.
